Oven Scrambled Eggs

¼ cup plus 2 tbsp butter, melted
24 eggs
1-1/2 tsp salt
2-1/2 cups milk (preferably use half & half for creamier eggs)
¼ tsp pepper, freshly ground
Optional sides: grated cheese, salsa

Preheat oven to 350F. Spray a glass 9 x 13 inch baking pan with PAM then pour melted butter into it. In a large bowl, whisk together eggs and salt until well blended. Gradually whisk in milk. Pour egg mixture into baking dish. Bake uncovered for 10 minutes, stir, then bake 10-15 minutes longer, or until eggs are set. Serve immediately, with dishes of salsa and grated cheddar cheese on the side. Yield: 12 servings
