Granola - aka Jo's Nuts

4 c quick cook oats
3/4 c sunflower seeds
2 cup nuts (pecans, almonds) chopped small (use a small blender on pulse)
1/2 c maple syrup
1/2 c vegetable oil
1 tsp vanilla
1/2 tsp salt
Mix together in roasting pan and bake for about 30-45 minutes at 325 - stirring when you think of it! When done, drizzle another 1/2 cup maple syrup over the hot granola.

Quiche


4 eggs
3/4 cups milk
1 tsp Dijon mustard
1/2 cup cheddar cheese, shredded
2 green onions, chopped
2 oz chopped ham
2 slices bread, cut in small cubes

Salt and pepper to taste

Add-ins: chopped red pepper, chopped broccoli

Spray a small glass pie plate. Beat the eggs, then whisk in the milk and Dijon. Add remaining ingredients. Let sit for an hour or overnight so bread absorbs liquid. Bake at 350ยบ for 35-45 minutes, until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting. Serves 2.

Date Pecan Oatmeal Breakfast Bars

1 cup butter or margarine
1 cup brown sugar
2 eggs
2 tsp vanilla
1/2 cup liquid honey
1 tsp baking powder
1 tsp baking soda
½ tsp salt
2 cups flour
1 cup oatmeal
2 cups dates, chopped
2 cups pecans, chopped
Optional: unflavored protein powder

Cream margarine with sugar. Add eggs, vanilla and honey and mix until combined. Sift together the baking powder, soda and flour and add to creamed mixture. Stir in oatmeal, dates and pecans.

Spread in a large cookie sheet lined with parchment paper. Bake 350F for 13-15 min. til slightly browned. Cut into bars.

Breakfast Quiche Bites

5 eggs
5 thin slices ham (chopped finely)
1 tbsp finely chopped onion
grated cheddar cheese (or other choice)
6 slices whole wheat bread

Beat eggs with whisk. Add ham and onion. Remove crusts from bread and flatten with rolling pin. Cut each flattened bread slice into four (24 squares in total). Spray a 24 cup mini-muffin tin with PAM and press a square of bread into each cup. Divide egg mixture (~1.5 tbsp) evenly amongst cups. Top each with a bit of grated cheese. Bake at 350 degrees F for 10-12 minutes or until firm. Makes 6 servings (4 each). Can be frozen and reheated in microwave or oven.
